Grenache 80%, Syrah 15%, Mourvèdre 5%
Hand harvested. The grapes are coming from old vines producing very low yields.
Destalking, 15 to 20 days vatting time, daily releases. Controled temperature between 27 to 30° C
10 months in concrete vats. No oak to show the purest expression of the fruit and terroir.
This wine is issued from old Grenache vines and old vines of Syrah and Mourvèdre. The grapes are picked at optimal maturity and sorted out before crushing. Grenache brings roundness, fatness and softness, while Syrah and Mourvèdre bring structure and frame. The tannins are extremely smooth and elegant, the wine is like velvet in the mouth, with roundness, complexity and a long finish of spices. It's like a baby Chateauneuf du Pape
To enjoy now or can be kept 5-7 years. 14°-16°C.
It will pair very well with Mediterranean dishes even spicy as well as dishes in sauce or game such as venison
