Terroir
Rounded pebbles of quarzites on a sub soil of red clay. Selected hillside parcels of our most qualitative and oldest vines in Courthezon.
Grape Varieties
Grenache 95%, Mourvèdre 5%
Winemaking
Careful pruning, de-budding, and de-leafing. Hand-picked at peak maturity and fast transportation in small containers to the winery to avoid juice release and oxydation.
Destalking, 35 days fermentation and daily releases. Controlled fermentation at 28° to 30°C. This wine is only produced the best years and procuced in very limited quantity, less than 2000 bottles with yields of 25 Hl/ha.Ageing
The wine is matured for 12 months in new demi-muids barrels (600 liter barrels), then several months in bottles.
Tasting Notes
The nose is intense and sophisticated, with notes of kirsch, black fruits such as blueberries and cherries, sweets spices and garrigue. The mouthfeel is smooth and powerful, with beautiful tannins and a very long finish of toasted aromas and spices.
Tasting Advices
Can be enjoyed within 3 years or can be kept 8 to 15 years. Serve at 15° - 16°C.
Food Pairings
It will match perfectly all kind of meat with sauce, game such as filet mignon of venison, roast wild boar, duck confit and fines cheeses.
